Clear color. Grassy, green, herbal, minty, savory aromas and flavors of bamboo shoots and water chestnuts, lemongrass and lime zest, petrichor, cinnamon, nutmeg, mace, anise, and and vanilla with a round, crisp, dry light-to-medium body and a tingling, complex, medium-length finish conveying shades of lime cream with tart cherries, watercress, shitake mushrooms, and bamboo and mild green peppers. Starts off a bit subdued on the nose but as you sit with the glass and allow the spirit to evaporate off your palate there is an elegant subtlety to the depth and complexity of flavors.
