Ecuador, like many South American countries, is known for aguardiente. Made from sugar cane, they can be clear or offer a golden color if aged in casks. Clear versions have notes of whipped cream and cane syrup and are generally used for mixing, often in a popular drink known as canelazo, to which boiled water with cinnamon has been added; sometimes fruit juice is also added. The cask aged versions are sometimes used in cocktails, but are often sipped neat, to appreciate their complexity and smoothness.
